Get the Ingredients.

To make a dip for your tamales, you’re going to need 15 dried chilies, five cloves of garlic, two teaspoons of ground cumin, a teaspoon of salt, two teaspoons of all-purpose flour, and two teaspoons of olive oil, or melted shortening.

Blend It All Together.

Take the chilies, remove their stems and seeds, and put them in a single layer on a baking sheet. Roast the peppers in the oven for about five minutes at 350 degree Fahrenheit. You’ll know they’re ready when you smell a sweet roasted aroma. Once that fragrance is there, take them out of the oven, and soak them in about two and a half cups of hot water for half an hour. Then, blend it all together — including the water — and add the salt, cumin, and the garlic. Keep blending until everything is smooth.

Thicken It Up.

Now that you’ve got the pepper all blended, take your flour and heat it with the oil or shortening in a saucepan. Once it’s browned, stir in your blended chilies, letting it simmer uncovered for about seven and a half minutes, or until it’s thickened up, and there you have it!
