Hummus is America’s proverbial snack sweetheart. From crackers to vegetables to sandwiches, hummus is the perfect healthy accouterments for any dish or meal.
But America didn’t always have such a blatant love affair with hummus dips. Despite its ancient origins, brands of hummus didn’t emerge in the United States until the 60s. Even then, hummus spread didn’t schmear its way into Americans’ minds and hearts until decades later. And it didn’t just do so on flavor alone.
Every basic hummus dip recipe is comprised of four ingredients: chickpeas, tahini, garlic, and olive oil. From there, people embellish their hummus dip recipes, adding anything from roasted red peppers to kalamata olives.
And hummus isn’t adored because of flavor alone. In fact, hummus nutrition has won many a health nut over. Hummus dip is comprised of whole foods, meaning unprocessed, intact ingredients. Each of these ingredients offer essential protein, fiber, and nutrients that fuel the body, keeping it lean, full, and ready for whatever is to come. Hummus is also an excellent option for vegetarians looking to get their daily serving of protein in.

To prepare the filling, take the hummus, feta, and pesto and mix in a bowl until incorporated.
Fire up your grill to medium. While it’s heating up, halve the zucchinis and scoop out the seeds until the zucchinis resemble boats. Then, brush them with olive oil, and sprinkle with salt pepper, and any other spices you have in mind.
Once the grill is heated up, place the zucchinis on face-down and grill until slightly charred and caramelized.
Remove the zucchinis and carefully fill each boat with the hummus mixture. Top with extra feta and tomatoes.
Place the boats back on the grill for 10 minutes, uncovered. When the mixture is bubbling, your food is ready!
